Fried Okra

There are few things more southern than fried okra, and this recipe keeps all of that southern taste without those southern calories. This is a great side to serve with some Louisiana meat dishes.
Ingredients:
1 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons coarse salt
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground pepper
3 large egg whites
3 teaspoons water
1 pound okra
Instructions:

Trim okra and slice diagonally into 1/2 inch pieces.

Mix flour, cayenne pepper, cornmeal, salt, and pepper into a shallow bowl.

In another bowl beat eggs, and mix in water.
4.
Toss the okra in the egg mix.
5.
Strain okra then add to flour mixture and toss to coat.
6.
Cook at 320 degrees for 10 minutes.
