Tofu Tater Tots

Who would have ever thought that tofu could actually make a recipe better? These tofu tater tots are like a meal rolled together, but could also be a perfect side item or appetizer.
Ingredients:
Tofu Tots:
1 pack (275g) firm tofu
1-1/4 pounds peeled all-purpose potatoes
3 tablespoons flour
1 teaspoon salt
black pepper
Crumb Coat:
1 cup flour
1 cup soy milk
1-2 cups panko crumbs
Instructions:

Start by draining the tofu as much as possible, up to half an hour if you have time. Simply open the package and leave it on a stack of paper towels.

Grate the tofu into a large mixing bowl.
3.
Grate the potatoes into another bowl, then squeeze handfuls over the sink to reduce liquid. Place each handful into the tofu bowl.

Add flour, salt, and pepper into the bowl and mix all of the ingredients with your hands to really press them together.
5.
Roll small portions of the mixture into tater tot shapes and place them on a baking sheet.
6.
Place flour, soy milk, and panko in 3 separate bowls.
7.
Roll each tot in flour, dip in soy milk, and roll in panko before
placing them in the basket to cook.
8.
Cook at 360 degrees for 18 minutes, shaking regularly.
