Adobo Crusted Lamb Loin Chops

Lamb does not get the respect it deserves in the average kitchen. Lamb is a rich meat with its own distinct flavor and recipes like this one really help to bring that flavor out. If your family doesn’t know that they are eating lamb, they will probably be head over heels about this dish.
Ingredients:
1 tablespoon fennel seed
1 tablespoon cumin seed
2 teaspoons coriander seed
2 teaspoons cracked pepper
1-1/2 teaspoons salt
2 teaspoons minced garlic cloves
2 teaspoons fresh oregano leaves
2 teaspoons lime zest
1/2 teaspoon fresh thyme
1/2 teaspoon fresh rosemary leaves
8 lamb loin chops, 1-inch thick
Instructions:

Throw fennel, cumin, coriander, and pepper in a dry skillet and cook on medium heat until aromatic.

Let cool then grind in a spice grinder or mortar.

Put ground mix into a bowl and mix in salt, lime zest, oregano, and garlic.

Next, mix in rosemary and thyme.
5.
Rub each side of the lamb chop with the spice mix then cover and set in the fridge for one hour.
6.
Cook at 360 degrees for 15 minutes, flipping half way through.
