Fried Squid with Aioli

Some people may shudder at the thought of eating squid, but they have never tried this recipe. It offers the flavor of squid that some people like, but not so overpowering that it turns you off from enjoying squid. Plus; how often do you have a chance to make your own aioli?
Ingredients:
2/3 cups potato starch
1-1/4 teaspoons baking powder
1-3/4 cups arepa flour
1 large egg yolk
1 garlic clove, finely grated
1 teaspoon fresh lemon juice
1/2 cup grapeseed oil
1/4 cup olive oil
Sea salt
6 ounces cleaned squid, bodies and tentacles separated
4 scallions, white and pale-green parts only, sliced into 3-inch pieces
4 very thin lemon wheels
1/3 cup torn basil leaves
Instructions:
1.      In a large bowl, mix the 3/4 cups arepa flour, baking powder, and potato starch together.
2.      Mix 2-1/3 cups water into the arepa flour mix and allow it to sit for half an hour.
3.       Place the remaining arepa flour in a separate shallow bowl.
4.      While the arepa flour mix is hydrating mix the egg yolk, lemon juice, and garlic in a separate bowl.
5.      Continue to stir the egg yolk mix while slowly pouring in the grapeseed and olive oils. Keep stirring until the sauce thickens – this is your aioli.
6.      Season the aioli with salt and add a teaspoon of water to make it ready to serve.
7.      Cut your squid into triangular chunks that are about 1-1/2 inches wide at the bottom.
8.      Rinse the chunks and pat them down with a dry paper towel.
9.      Coat the squid, lemon slices, and scallions in the plain arepa flour and then in the arepa flour batter mix.
10.   Cook them in batches in your Philips air fryer at 360 degrees for about 10 minutes, tossing half way through.
11.   Top with basil and serve with your home made aioli sauce.
