Mexican Fried Ice Cream

Give your fryer a break for this recipe which offers all of the benefits of the fryer without the need to use it. This delicious treat is sure to please the whole family, but may be more of a “special occasions” kind of thing due to the long prep time.
Ingredients:
5 cups cornflakes cereal
1/2 cup unsalted or salted butter
1/4 teaspoon ground cinnamon
1 (1-1/2-quart) container choice ice cream (vanilla, cinnamon, or caramel are just a few examples)
Instructions:
1.
Place the cornflakes in a sealable plastic bag and crush them until you have fine crumbs.
2.
Melt the butter over medium heat in a skillet and mix in corn flakes and cinnamon.
3.
Pour the mixture into a bowl and refrigerate for about 15 minutes.
4.
Form balls of ice cream in your hands and roll it in the corn flake mix.
5.
Freeze for at least one hour before serving.
