Chilaquiles

This recipe is actually a traditional Mexican breakfast recipe, but it works great for any time of the day. It is a filling snack that is not too heavy and offers a satisfying flavor profile.
Ingredients:
12 corn tortillas
2 tablespoons olive oil
2 cups salsa
Salt to taste
1-1/2 cups shredded cooked chicken breasts or 4 scrambled eggs
Instructions:
1.       Cut each tortilla into 6 slices like a pizza or pie.
2.       Add olive oil to a skillet and warm on medium heat.
3.       Pour salsa in the skillet and stir to thicken.
4.       Mix the chicken or eggs into the salsa and simmer.
5.      Brush tortillas with the remaining tablespoon of olive oil and fry using your Philips at 400 for about 5 minutes, tossing half way through.
6.      Fold the tortillas into the salsa mix and return to medium heat until warm (2-3 minutes).
7.       Top with your choice of garnishes and serve.
