Wonder Fries

It would be pretty bold to call these wonder fries if they didn’t earn the name. The potatoes themselves are pretty run of the mill, which actually gives you a chance to experiment. The real hero here is the miso sauce which really sets these fries off.
Ingredients:
1-1/2 pounds fingerling potatoes
1/4 cup mayonnaise
2 teaspoons miso paste (brown is ideal, or try chickpea or brown rice miso)
1 to 2 teaspoons fresh lemon juice
2 stalks of green onions
Instructions:
1.      Start by washing and rinsing your potatoes, then placing them in a large pot covered in 2 inches of water.
2.      Boil the potatoes for about 8 minutes or until they just start to soften.
3.      Lay a large dish towel on the counter while the potatoes cook.
4.      When the potatoes are done, strain them then place them on the dish towel to release excess water and cool down; it should take about 5 minutes.
5.       Mix the miso, mayo, and lemon juice together and refrigerate.
6.       Cook the potatoes for 18 minutes at 360 degrees, shaking occasionally.
7.      Toss your potatoes together with the onions and top with your miso mix.
