Beet Burgers

Living a gluten free lifestyle is hard enough the way it is, but if you are a vegetarian on top of that it can almost impossible. These burgers are both gluten free and vegetarian, but the best part is that even the most ravenous meat lover in your family will enjoy these burgers.
Ingredients:
1-2 tablespoons olive oil
1 medium yellow onion, diced
3 minced garlic cloves
3 medium beets, peeled and then grated or shredded
1/2 cup rolled oats or walnuts
1/2 cup prunes
2 eggs
1 (15 ounce) can black beans, drained and rinsed
2 cups cooked brown rice
2 teaspoons coriander
1 teaspoon thyme
1 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon black pepper
Instructions:

Pour olive oil in a large skillet and sauté onions for 5 minutes.

Mix in garlic and sauté for another minute; remove from heat and set aside.

While the onions and garlic sauté, grate your beets and set them aside.
4.
Combine prunes and oats in a food processor and pulse until mixed, but not turned into prune paste.

Pulse eggs into the prunes, then set that bowl aside.
6.
Mash the black beans into a large mixing bowl until they are mostly mashed, it is ok to still have a few chunks here and there.
7.
Pour in beats, onion mix, prune mix, coriander, rice, thyme, cinnamon, pepper, and salt.
8.
Mix everything until it is combined evenly.
9.
Form the mix into 8 patties and cook at 360 degrees for 20 minutes, flipping half way through.
