Creamy Dill
New Potato Casserole
12 to 16 medium new potatoes
1 cup sour cream
1 stick butter, melted
1 teaspoon dried dill
1 teaspoon salt
½ teaspoon pepper
8 slices bacon, cooked and crumbled
2 cups shredded Cheddar cheese
Wash, boil, and cut the new potatoes into bite-size chunks. When the potatoes are soft and cooled, preheat the oven to 350 degrees. in a large bowl, blend the sour cream, butter, dill, salt, and pepper and mix well. Gently fold in the potatoes. When all the potatoes are covered in the cream sauce, pour into a 13 x 9-inch baking dish, cover with a layer of bacon, and top with the cheese. bake for 20 to 25 minutes, or until thoroughly heated and bubbly.
