No-Bake Banana Pudding

This is a light, chilled version of the old Southern favorite. It is also my favorite. It’s easy and perfect when you are responsible for bringing the dessert to a church function.

1 (5.1-ounce) package instant vanilla pudding mix (French vanilla is wonderful)

1 (16-ounce) container frozen whipped topping, thawed

5 large bananas, sliced

1 (16-ounce) package vanilla wafers

Mix the pudding according to the package instructions. Fold in the whipped topping. In a dessert bowl (clear ones show the layers), create layers in this order: pudding, bananas, and wafers. This should layer three times with the last layer of vanilla wafers, crumbled on top. Cover the pudding and refrigerate overnight before serving. Keep chilled.

Makes 8 servings

I learned back then that in the South, a good cake maker could made a cake that looked like anything she wanted, from a beauty queen to a prize-winning bass to an armadillo.
