Country Ham Aloha Rolls
6 trimmed small slices country ham
1 tablespoon vegetable oil
1 (8-ounce) container Neufchâtel cheese
¼ cup crushed pineapple, drained
6 dinner-size Hawaiian or potato rolls
In a medium skillet pan-fry the ham slices in the oil on medium heat on both sides for 5 minutes per side. Drain the cooked slices on a paper towel–lined plate. In a small bowl blend the cheese and pineapple to make a spread. Split the rolls, spread the bottoms with the pineapple spread, add a slice of cooked ham to each, cover with the tops, and serve warm.

Here’s what Mama said about our table: Don’t ever make a centerpiece that people have to crane their necks to see over. Always arrange flowers in groups of odd numbers. Pretty table linens, plates, and glasses just make you feel good, and the food seems to taste better. Clean as you go, but don’t let the food get cold trying to make sure everything is perfect.
