Smoked Chicken,
Grape, and Walnut Salad
I catered a bridal shower with overnight notice, and this recipe was born. It’s chicken salad, but certainly out of the ordinary. Served on buttery croissants or red leaf lettuce, or with a light brothy soup, this salad is pretty and hearty enough to be a meal.
1 tablespoon olive oil
2 cups chunked uncooked chicken breast
1 teaspoon minced garlic
3 tablespoons liquid smoke
1 teaspoon salt
1 teaspoon pepper
½ medium Bermuda onion, chopped fine
½ cup finely chopped celery
1 cup halved green seedless grapes
1 cup chopped walnuts
½ cup Miracle Whip
½ cup sour cream
2 tablespoons spicy coarse-ground mustard
In a skillet heat the oil. Add the chicken, garlic, liquid smoke, salt, and pepper and cook until the chicken is done. Drain the chicken. In a large bowl toss the chicken with the onion, celery, grapes, walnuts, Miracle Whip, sour cream, and mustard until blended. Serve immediately.
Makes 4 to 6 servings
