Cream Cheese Cupcakes
These are childhood treats with a grown-up flavor. Dress them up with sugared fruits or fruit topping to match the color theme of any party.
2 (8-ounce) packages cream cheese, softened
2 large eggs
¾ cup sugar
2 teaspoons vanilla extract
18 vanilla wafers
Preheat the oven to 350 degrees. Line a muffin tin with paper liners. In a medium bowl blend the cream cheese, eggs, sugar, and vanilla until creamy. Put one vanilla wafer in the bottom of each cup of the prepared muffin tin. Pour the cream cheese mixture into the muffin cups, about two-thirds full, allowing room for the muffins to rise. Bake for 15 minutes. Cool the muffins, cover, and refrigerate.
