Baked Catfish
This is a great dish served over cheese grits, yellow rice, or wild rice, and served with a steamed vegetable medley.
1 tablespoon olive oil
4 catfish fillets
1 large sweet onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon minced garlic
½ teaspoon crushed red pepper
1 teaspoon salt
Preheat the oven to 375 degrees. Grease a 9-inch square baking dish with the oil. Add the fillets. Layer the fish with the onion, bell peppers, garlic, crushed red pepper, and salt. Cover the baking dish with aluminum foil. Bake for 45 minutes, or until the fish is flaky.
