Peanut Butter Cream Icing
Put icing on a muffin and you’ve got dessert! This is a yummy way to spread the taste of peanut butter in the most delicious of ways. In addition to muffins, try it on cupcakes, loaf cakes, or Bundt cakes.
1 tablespoon butter
¼ cup sugar
2 tablespoons creamy peanut butter
¼ cup milk
1¾ cups powdered sugar
2 teaspoons vanilla
Melt the butter over medium-high heat in a saucepan. Add the sugar and peanut butter and stir constantly while cooking for 2 minutes. Gradually add the milk and stir until the mixture is smooth. remove the mixture from the heat and allow it to cool completely. Gradually stir in the powdered sugar and vanilla and beat just until smooth. Cool before using.
Makes icing for 1 three-layer cake, 2 loaf cakes, 1 Bundt cake, or 24 cupcakes
