Hushpuppies
3 cups vegetable oil for deep-frying
1 cup cornmeal
½ teaspoon salt
2 teaspoons baking powder
1 large egg
1 small onion, chopped
¼ to ½ cup milk
In a deep fryer or large cast-iron skillet, heat the oil to 375 degrees. Meanwhile, in a medium bowl combine the cornmeal, salt, baking powder, egg, onion, and milk and mix well. Drop by tablespoonfuls into the hot oil. Fry until a deep golden brown on both sides. the hushpuppies should float in the oil. remove when done and drain on paper towels. Serve while hot.
Makes 6 to 8 hushpuppies
