Kickin’ Tartar Sauce

If you are frying your own catfish, why not whip up your own tartar sauce?

1 cup chopped dill pickles or dill pickle relish

¾ cup minced onion

½ teaspoon minced garlic

2 cups mayonnaise

1 tablespoon lemon juice

½ teaspoon salt

c3 teaspoon white pepper

c3 teaspoon cayenne pepper

Combine all the ingredients in a small bowl. Cover and refrigerate overnight so all the flavors are absorbed.

Makes 2 pints
