Pumpkin Bread

Served warm, this is a great excuse for honey-walnut cream cheese, spread on thick, with a hot, strong cup of Community brand coffee, a dark Louisiana brand that finally is available in most major grocery stores. I used to bring back pounds of it from trips home and keep it in my freezer, just to keep from getting homesick.

1c2 cups all-purpose flour

1¼ cups sugar

¼ cup firmly packed dark brown sugar

1 teaspoon baking soda

¼ teaspoon baking powder

¼ tablespoon salt

2 cups pureed pumpkin (canned is fine)

1 tablespoon pumpkin pie spice

2 large eggs

¼ cup vegetable oil

¼ cup applesauce

¼ cup vanilla yogurt

¼ cup water

½ cup chopped walnuts

Preheat the oven to 350 degrees. Grease and flour two 8 x 4 x 3-inch loaf pans. in a large bowl blend all the ingredients. Pour into the prepared pans and bake for 1½ hours.
