Brunch Pasta
For those days when you sleep in and want eggs and bacon, but it’s later in the day and you want a meal to keep you full for two meals, this is a perfect dish. It’s easy, filling, and quite impressive for overnight guests. The Italians make a dish called pasta carbonara. This is based on that dish, with a Southern touch.
3 tablespoons olive oil
1 (12-ounce) package penne pasta, cooked al dente
6 large eggs
2 slices American cheese
1 cup shredded Parmesan cheese, divided
6 slices bacon, fried and crumbled
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
In a large skillet or frying pan, heat the oil and add the cooked pasta. Quickly crack the eggs evenly in the pan and begin to scramble with the pasta. Add the American cheese, ½ cup of the Parmesan cheese, and the bacon, and integrate it into the pasta as the cheeses begin to melt. Gently blend in the garlic powder, salt, and pepper and serve immediately, topping each serving with the remaining ½ cup Parmesan cheese.
