Christmas Morning Casserole

This easy make-ahead breakfast casserole is perfect for those early see-what-Santa-Claus-brought mornings when you don’t want to cook but you are starving. With Christmas dinner to prepare, and the joy of opening those early presents, you simply stick this casserole in to bake. It’s great for overnight guest breakfasts, Sunday school brunches, and breakfast meetings.

1 pound ground sausage

4 tablespoons butter

6 slices potato bread, no crust (Give the crusts to the birds. They’re hungry this time of year!)

2 cups shredded mild Cheddar cheese

8 large eggs, beaten

2 cups milk

1½ teaspoons seasoning salt

Cook the sausage and drain. Melt the butter in a 13 x 9-inch baking dish. Line the baking dish with the potato bread slices, over the melted butter. Layer the cooked sausage over the potato bread. Layer the cheese over the sausage. In a large bowl beat the eggs, milk, and seasoning salt together. Pour the egg mixture over the entire contents of the baking dish. Cover and refrigerate overnight.

The next day, preheat the oven to 350 degrees and bake the casserole for 45 minutes.
