Marinated Veggie Salad

3 tablespoons apple cider vinegar

8 tablespoons balsamic vinegar

4 tablespoons olive oil

2 teaspoons minced garlic

1 teaspoon salt

1 teaspoon pepper

1 teaspoon Worcestershire sauce

6 tablespoons sugar

2 medium cucumbers, cut into small chunks (peel left on)

2 large tomatoes, peeled and cut in small chunks

2 medium green peppers, chopped

2 medium onions, chopped

c3 cup chopped fresh basil

In a medium saucepan, stir together the apple cider and balsamic vinegars, oil, garlic, salt, pepper, Worcestershire sauce, and sugar. Cook over medium heat until the sugar is dissolved. In a large bowl, gently mix the cucumbers, tomatoes, green peppers, onions, and basil. Stir in the dressing. Cover and refrigerate the salad for at least 30 minutes before serving chilled.
