Makes 1 serving
• generous chunk (adjust size according to hunger) of good, strong cheese
• 2 slices ham
• generous helping of a relish or chutney of your choice (or whatever is left in the fridge)
• a couple of pickled onions/cornichons or gherkins (optional)
• 1 small baguette/hunk of bread
• 4 cherry or small plum tomatoes
Perfect for a desk picnic, when you can’t get outside. Add pickled onions and cornichons to the mix at your colleagues’ peril.
In the morning
If you are using frozen bread, preheat your oven to 400°F.
Wrap your cheese and ham in separate parcels of parchment paper. Transfer your relish or chutney of choice into a small jam jar. Wrap any pickles you dare to bring in a small piece of foil.
Bake the bread according to the instructions (usually around 10 minutes)—until golden and crispy.
Wrap the bread in a clean dish towel, and tuck the tomatoes in. Layer everything in a bag: bread first, then the cheese and ham parcels, then the pickle and the jar. Don’t forget a knife if you don’t have access to one at work.
Come lunchtime
Spread everything out on the dish towel and turn on your desk lamp. Pretend you’re in a café garden.
