A SIMPLE TORTILLA


Preparation time: 45 minutes

Makes 2 servings

• 2 tbsp extra-virgin olive oil

• 1 onion, halved and sliced into thin crescents

• 1 potato, halved and sliced into thin crescents

• salt and freshly ground black pepper

• 4 eggs

• 2 Laughing Cow triangles (optional but recommended)


Although not very labor-intensive, this takes some slow cooking, so it’s not a recipe to embark on if you’re rushed for time. If you have any other veg to hand, you can of course add it at the same time as the onions and potatoes.


Add the oil to a frying pan and, when hot, add the sliced onions and potatoes. Fry on a medium heat for 3 minutes, stirring frequently, until everything begins to brown. Turn the heat down to the very lowest setting, season with salt and pepper, and put a lid on the pan. Leave for 20 minutes to steam.

Crack the eggs into a bowl, whisk very lightly (don’t worry about them being completely combined), and season with salt and pepper. If you have one of those welcome cheese fridge surprises on hand, such as a couple of Laughing Cow triangles, break them into the egg mixture.

Remove the onion and potatoes from the heat, then pour the egg mixture over. Return to a very low heat, covering the pan with a lid, and leave for 10 minutes. Finish off under a broiler for 5 minutes, then remove and leave to cool.

Slice in half and wrap one half securely in foil. A small salad is a nice accompaniment, but by no means necessary.
