FREEZER GUACAMOLE

Sour cream and lime juice protect the avocado from oxidizing and turning brown. With freezing, the guacamole retains its beautiful shade of green and characteristically creamy texture for up to 1 month. To serve the guacamole, thaw it overnight in the refrigerator.

START TO FINISH: 15 MINUTES MAKES: THREE 1½-CUP PORTIONS


1. In a medium bowl combine mashed avocados, green onions, cilantro, sour cream, lime juice, salt, and, if desired, hot pepper sauce.

2. Divide guacamole among three 1-quart resealable freezer bags. Squeeze air from bags; seal and label. Store in the freezer for up to 1 month.

SERVING DIRECTIONS: Thaw overnight in the refrigerator.
