Banana Cake

Author’s Note: My kids absolutely love their banana cakes! I pack slices of the cake either as their dessert for lunch or for their snacks. Something about the cake being light and chewy makes it truly enjoyable for them. I am quite proud to share that one day my kids told me that one of their classmate’s mom asked them to ask me for the recipe!

Ingredients

Let’s Cook:

  1. Heat air fryer to 160c degrees
  2. Coat ring cake tin with cooking spray
  3. Put into a small bowl the stevia and the puree, mix until creamy
  4. Add honey and egg
  5. Mash the banana and add into the bowl
  6. Whisk until smooth
  7. Scoop the batter into the tin
  8. Level the surface to make it smooth
  9. Put the tin into the basket of the air fryer
  10. Bake for 30 minutes
  11. Serve

Depending on your preference, you can mash the bananas thoroughly, but I want a bit of a chunk of the bread to add a little texture to the cake. Be sure to try out a chunky version of the recipe on your next try.
