Christmas Cake

Author’s Note: Okay, this recipe is a bit too early for the holidays, but it pays to practice, this way when Christmas does arrive, you will have this recipe perfected. The claim to fame of this cake is the bright colors that it has. It has festive reds and greens. I used this as a Christmas giveaway to close friends and visiting relatives. Let me tell you that it has saved me the time and money because of instead of joining the holiday rush buying gifts; I was at my kitchen stress-free and having fun baking this cake.

Ingredients

Let’s Cook:

  1. Heat the air fryer to 160c degrees
  2. Coat two eight-inch round pans with cooking spray
  3. Put the together in a bowl the baking powder, salt and flour, mix until well combined
  4. Add the applesauce and stevia, use an electric mix, pulse until well beaten
  5. Add the vanilla extract and the eggs, beat again until well combined
  6. Pour ¼ of the milk into the mixture, then mix, then ¼ of the milk again and so on until all the milk is poured
  7. Divide the batter into two
  8. Put red coloring on one-half of the batter and green coloring on the other half, put the batter into the pans
  9. Bake the first batch for 20 minutes
  10. Bake the second batch for another 20 minutes
  11. Allow both batches to cool
  12. Layer the two cakes together
  13. Use red, green and white sprinkles to top the cake
  14. Slice to desired sizes
  15. Serve

If you want to try this recipe early in the year but do not want it to look too Christmas-y I recommend that you either skip or change the coloring. For example, if you want to serve it at the office potluck, you can choose the colors of your company logo to make it look entirely different. This makes this recipe very versatile for any occasion.
