Fruit Cake

Author’s Note: This is usually a Christmas treat but for playing high tea with my girls, it has become a staple. Whenever I play dress up with my kids for a weekend afternoon of high tea, the fruitcake takes center stage or in this case the center of the table. I would like to think that my kids have an even better time when we bake the cake together.

Ingredients

Let’s Cook:

  1. Heat air fryer to 180c degrees
  2. Coat round cake tin with cooking spray
  3. Put the applesauce in a bowl, and then add the stevia, cream until fluffy
  4. Add the extract and mix until well combined, set aside
  5. Put in another bowl the raisins, flour, ginger powder, caraway seeds, cinnamon powder, and baking powder, mix until well combined
  6. Put together the raisin mixture with the applesauce mixture, fold
  7. Scoop the batter into the tin
  8. Put the tin into the air fryer basket
  9. Bake for 15 minutes
  10. Allow to cool
  11. Slice into desired sizes
  12. Serve

If you want to make this cake extra special, I suggest adding more fruits and nuts aside from raisins. Add cashews, walnuts, cherries or other dried fruits to make this recipe even better.
