Author’s Note: Sometimes I give myself a treat and when I mean to treat, I mean white chocolates. There is something about white chocolate that makes me instantly happier after a long day at work.

Ingredients

Let’s Cook:

  1. Heat air fryer to 160c degrees
  2. Put in a bowl the stevia and the margarine, cream until fluffy
  3. Add vanilla and egg, mix until well combined
  4. Add cashews and mix again
  5. Use hand to shape the dough into small 2 inch balls
  6. Line basket with cookie sheet
  7. Arrange the balls with ample space in between
  8. Use palm to flatten slightly
  9. Bake for 15 minutes
  10. Allow to cool for another 10 minutes
  11. Serve

imageExtra Tip:

If you want bigger chocolate chunks on your cookies like me, then you may want to split your chocolate into two. Break one-half of the chocolate with the rolling pin into smaller pieces as per the recipe instructions but keep the other half in bigger chunks. This way when it is cooked you will have those large chunks.
