
Author’s Note: I heard from a Chinese colleague in the office that walnuts are considered good luck in their culture. It is meant to bring prosperity and health too. Since learning of this tradition, I have started to gift these muffins to friends as a way to wish them good luck.

Ingredients
- 2 eggs
- 3 bananas
- ½ cup raisins, chopped
- ½ cup walnuts
- ½ cup stevia
- ½ cup cooking oil
- ½ tsp vanilla extract
- 1 tsp baking soda
- 1 ½ cup almond flour
- 1 tsp salt
Let’s Cook:
- Heat air fryer to 160c degrees
- Coat muffin tins with cooking spray
- Put in a bowl the eggs and whisk until well beaten
- Add stevia, extract and cooking oil, mix again and set aside
- Put in another bowl the baking soda, flour and salt, mix again, set aside
- Put in another bowl the bananas and mash using a fork
- Add the bananas to the egg mixture, mix again
- Add the all the mixtures together, fold and mix
- Divide the batter into the tins
- Sprinkle the raisins and walnuts over each of the tins
- Use an aluminum foil to cover the tins
- Bake for 30 minutes
- Remove the foil and reduce the heat to 140c degrees
- Bake again for another 5 minutes
- Serve
Extra Tip:
Feel free to change the walnuts to another nut that you prefer. Almonds and cashews will also work if you have the taste for these kinds of nuts.
