Author’s Note: I was on a well-deserved vacation and came across this pastry shop that served this delectable dessert. Just by looking at it, I knew that my kids will have fun baking it and tasting it at the same time. I made sure to take pictures of how it was professionally done so I can recreate it as close as possible back home.

Ingredients
For the profiteroles
- 6 eggs
- 50 g applesauce
- 200 g almond flour
- 300 ml water
For the filling
- 300 ml whipped cream
- 2 tsp vanilla extract
- For the sauce
- 25 g applesauce
- 100 g unsweetened chocolate
- 2 tbsp whipped cream
Let’s Cook:
- Heat air fryer to 170c degrees
- Heat the applesauce in water and add the flour one small quantity at a time
- Put the mixture into a pan over medium heat
- Cook until it becomes a solid dough in the middle
- Remove from heat and allow to cool
- Put dough into a bowl, add the eggs and mix again
- Use hands and shape into small balls
- Bake for 10 minutes
- In small bowl, put together the vanilla extract and the whipped cream, whisk until thick
- Use a rolling pin to break the chocolate into smaller chunks
- Put in a glass bowl, the chocolate, and whipped cream then put over a pan of boiling water
- Allow to melt and mix
- Take the vanilla extract mixture and sandwich in between two of the profiteroles
- Put on serving plate
- Drizzle the chocolate mixture on top
- Serve
Extra Tip:
For an added treat to adults, one of my fancy friends suggested that I pair these pastries to with a shot of Baileys. I tried, and it is a great match.
