Author’s Note: Another fancy dessert but in reality, it is quite easy to make especially with the air fryer. I can’t recall how many soufflés I have eaten my entire life and how much money I have spent for these expensive desserts. One dinner, I decided to take the challenge and find a way to actually bake it myself. If you do not have beginner’s luck, chances are you will not get it right but trust me the wait is all worth it. When you get the perfect soufflé, you will feel a sense of baker’s pride.

Ingredients
- 4 egg yolks
- 5 egg whites
- ¼ cup almond flour
- 1 cup whole milk
- 1 oz stevia
- 1 tsp cream of tartar
- 1 vanilla bean
- ¼ cup applesauce
Let’s Cook:
- Heat the air fryer to 160c degrees
- Put in a bowl the applesauce and the flour, mix until well combined, set aside
- Pour the milk into a saucepan and add the stevia, cook until the stevia dissolves
- Add the vanilla bean and allow to boil
- Pour the flour mixture into the saucepan
- Use a wire whisk and beat until there are no more lumps
- Allow to simmer until the mixture thickens
- Remove from heat and take the bean
- Pour mixture into glass bowl, transfer bowl into bigger bowl with ice and allow to cool for 10 minutes
- Coat 6 ramekins with cooking spray and sprinkle with stevia, set aside
- Put in another bowl the vanilla extract and yolks
- Add into the flour mixture, set aside
- Put in another bowl the egg whites, cream of tartar and stevia beat until it peaks
- Fold the egg white mixture into the soufflé, then pour into the ramekins, smooth the top
- Put the ramekins into the air fryer basket
- Bake for 15 minutes
- Serve
