Author’s Note: I have always been a fan of the cupcake, especially those with interesting designs as their toppings or frostings. Still, sometimes I want a simple version and it is becoming difficult to find a great but simple cupcake. So, I decided to make my own cupcake using one of my favorite fruits, strawberries!

Ingredients
- ¼ cup strawberries
- 2 eggs
- 100 g stevia
- 50 g applesauce
- 1 tbsp whipped cream
- 100 g almond flour
- ½ tsp vanilla extract
- ½ tsp pink food coloring
Let’s Cook:
- Heat air fryer to 170c degrees
- Put the applesauce and stevia in a bowl, mix until fluffy
- Add the extract and the eggs, one at a time while beating
- Add small amount of the flour in between the eggs
- Scoop into bun cases, filling up to 70-8% of the way
- Bake for 8 minutes
- Put in a bowl the whipped cream and food coloring, mix until well combined
- Put strawberries into blender, pulse until smooth, add strawberry to the colored mixture
- Put colored mixture into pipe and top the cupcakes
- Serve
