Author’s Note: It is time to make something more than my usual cupcakes, and when I am in the mood for something special, the red velvet cupcakes are my best bet.

Ingredients
- 3 eggs
- 2 cups almond flour
- ¾ cup stevia
- ¾ cup peanut butter
- 1 cup cream cheese
- 1 tsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 2 tsp beet powder
- 1 cup applesauce
Let’s Cook:
- Heat air fryer to 170c degrees
- Put in a bowl the eggs, stevia, cocoa powder, beet powder, flour and peanut butter, whisk until combined
- Coat cupcake tins with cooking spray
- Divide the batter evenly and pour into the tins
- Bake for 10 minutes
- Allow to rest for 10 minutes to cool
- Put in a bowl the vanilla extract and applesauce, mix until well combined
- Top the vanilla mixture on top of the cupcakes
- Serve
