Author’s Note: It is time to make something more than my usual cupcakes, and when I am in the mood for something special, the red velvet cupcakes are my best bet.

Ingredients

Let’s Cook:

  1. Heat air fryer to 170c degrees
  2. Put in a bowl the eggs, stevia, cocoa powder, beet powder, flour and peanut butter, whisk until combined
  3. Coat cupcake tins with cooking spray
  4. Divide the batter evenly and pour into the tins
  5. Bake for 10 minutes
  6. Allow to rest for 10 minutes to cool
  7. Put in a bowl the vanilla extract and applesauce, mix until well combined
  8. Top the vanilla mixture on top of the cupcakes
  9. Serve
