SESAME PORK
TENDERLOINS

Whole pork tenderloins are brushed with a flavorful mixture of hoisin sauce, ginger, and sesame oil, then coated with sesame seeds and roasted until golden. Just slice and serve over rice, or serve the sliced pork “Peking duck–style,” tucked into warm flour tortillas with green onion and cucumber.

¼ CUP HOISIN SAUCE

1 TABLESPOON GRATED, PEELED
FRESH GINGER

½ TEASPOON ASIAN SESAME OIL

7 CUP SESAME SEEDS

2 WHOLE PORK TENDERLOINS
(12 OUNCES EACH)




1 Preheat oven to 475ºF. In small bowl, whisk hoisin sauce, ginger, and sesame oil until blended.

2 Spread sesame seeds in even layer on waxed paper. With pastry brush, spread hoisin mixture on tenderloins, then roll pork in sesame seeds until evenly coated.

3 Place tenderloins on rack in small roasting pan (13" by 9"). Turn thin ends of pork under for even thickness. Roast 15 minutes; turn tenderloins over and roast until thermometer inserted in center of each pork tenderloin reaches 155ºF, about 15 minutes longer. Internal temperature will rise to 160ºF upon standing.

4 Transfer tenderloins to cutting board. Let stand 5 minutes to set juices for easier slicing.
