Trifolium pratense
Most of us would be more familiar with hunting the elusive four-leafed clover as a symbol of good luck than foraging the plant for food. Red clover, however, is another unlikely edible plant, with the leaves having a faint bean-like flavour. The blossoms, which are similar in appearance to onion flowers with tightly-packed bunches of electric purple to crimson red flowers, can also be eaten fresh or dried and infused to make a sweet-tasting herbal tea. It is also the national flower of Denmark.
