Prepare the rice for the Camembert chicken and tofu satay according to package directions. You will need about 112 cups uncooked rice to yield 4 cups cooked.

While the rice is cooking, begin making the polenta fries (steps 1–3). Place in the refrigerator for 30 minutes.

Prepare ingredients for the tofu satay.
13.5oz (385g) extra-firm tofu, cubed
Place in a small bowl.

12 small yellow onion, diced
3 garlic cloves, minced
1in (2.5cm) piece fresh ginger, minced
1 red chili pepper, thinly sliced (optional)
Place in a small bowl.

2 heads bok choy, trimmed
Place in steamer insert.

Check the rice and remove from heat when cooked. Cover and set aside. Prepare the tofu satay (all steps).

Preheat the oven to 400°F (200°C). While the oven heats, spread a dish towel over a large bowl and grate 4 zucchini squash into the towel. Squeeze out excess moisture. Dice 1 yellow onion and prepare the zucchini fritters (all steps).

Line a baking sheet with foil and finish the polenta fries (steps 4–5). Put the fries on the top rack of the oven and set a timer for 30 minutes.

Once the polenta fries are in the oven, line a second baking sheet with foil. Cut 1 head broccoli into florets and prepare as directed for the turkey meatballs (step 2). Put the broccoli on the lower rack and set a second timer for 20 minutes.

Cut the chicken breasts in half lengthwise, slice the Camembert cheese, and cut the asparagus into bite-size pieces. Prepare the Camembert chicken (steps 1–3).

While the asparagus cooks, take the broccoli and polenta fries out of the oven. Divide them evenly among 4 meal prep containers. Finish the asparagus and assemble the Camembert chicken meals.

Prepare the turkey meatballs (steps 3–4) and set a timer for 12 minutes. While the turkey meatballs bake, prepare the BBQ sauce (all steps). When the turkey is done, add to the containers with the polenta fries and broccoli.
