Makes 6 servings
4 c. mashed potatoes
2 eggs, beaten
2 onions, finely chopped
1 t. salt
1/2 t. pepper
1/4 c. olive oil
Combine potatoes, eggs and onions in a medium bowl; stir well to blend. Add salt and pepper. Heat oil in a large skillet over medium heat. Drop potato mixture by 1/4 cupfuls into oil; flatten each to 3/4-inch thick. Cook until golden on both sides.
Place violets, lily-of-the-valley and pink miniature roses in teapots to serve as centerpieces…so sweet.
