Makes 6 servings
2 T. butter, sliced
1/2 c. all-purpose flour
1/2 c. milk
2 eggs
1/4 c. mini semi-sweet chocolate chips
1 pt. strawberries, hulled and sliced
1/4 c. sugar
Garnish: frozen whipped topping, thawed
Place butter in a 9" glass pie plate and melt in a 200-degree oven; set aside. In a medium bowl, beat flour, milk and eggs until well blended. Pour mixture over melted butter; do not stir. Sprinkle chocolate chips evenly over top. Bake at 400 degrees for 20 to 25 minutes, or until edges are puffed and deep golden. Sprinkle strawberries with sugar and spoon into center of pancake. Cut into wedges; garnish with whipped topping.
For a casual get-together, serve breakfast favorites on cheery blue and white dishes arranged on homespun placements. Tuck a bouquet of sunflowers in an old spatterware coffee pot!
