Makes 6 waffles
2 eggs
1-1/2 c. buttermilk
1/3 c. butter, melted
1/2 c. banana, mashed
1 t. vanilla extract
2 c. all-purpose flour
2 T. sugar
4 t. baking powder
1/4 t. salt
3/4 c. chopped pecans
Garnish: maple syrup, sliced bananas, chopped pecans, whipped cream
In a medium bowl, beat eggs for one to 1-1/2 minutes with an electric mixer on medium speed. Blend in remaining ingredients except pecans just until smooth. Pour about 1/2 cup batter onto a preheated waffle iron; sprinkle with pecans and bake as manufacturer directs. Garnish as desired.
Tie silverware together with ribbons in soft colors…peach, pink, ivory and sage are all pretty!
