IN THE PANTRY
NOW, FOR PANTRY ITEMS, THESE ARE THE ITEMS TO ALWAYS HAVE ON HAND: Chicken stock, flour, sugar, canola oil, vinegars of various types (see opposite page), pasta in various shapes, canned tomatoes, olive oil, garlic, kosher salt, beans, rice, panko breadcrumbs, chiles, and black peppercorns. We also like to have Sriracha chili sauce. It’s good to have lemons on hand to add brightness to your dishes, aïoli, mayonnaise, and a few mustards, but at least Dijon and whole grain.
