This will become your go-to chapter for those rough days where cooking just seems like an overwhelming task. These salads are easy to prepare and most of the ingredients are pantry staples. They make tasty lunches as well as quick and easy dinners. One of my favorites, the Mediterranean Pita Salad with Faux Tzatziki, can be transformed into a filling meal with the addition of simply grilled chicken or meatballs. And we never miss a Fourth of July without the Charred Corn & Farro Summer Salad. Don’t skip the Chilled Soba Noodle Salad, which is the perfect riff on migraine-safe takeout at its finest.

As for these soups, the Farro & Lemongrass Chicken Soup is the perfect update to a traditional chicken noodle. I swear it has magical healing powers when you’re struggling with a cold. And the Curried Carrot & Sweet Potato Soup has pain-fighting power, with ginger and turmeric. I like to freeze my soups in locking plastic bags so I can easily thaw individual portions on nights I don’t feel up to cooking.
