Seriously Good Sides

These recipes are more than just side dishes—some of them could be the star of the whole show. Anyone who is vegetarian and trying to follow a migraine diet will love this chapter, as it contains some of my favorite recipes in the entire book.

The Smoky Sweet Potatoes are the perfect accompaniment for any grilled meat, and we enjoy them weekly with grilled burgers or chicken sandwiches. The Whipped Parsnips, which are nutty and a little sweet, not only pair with rich meals like the Hearty Wine-Free Short Ribs but also with a simple pan-seared salmon. Quick weeknight staples that also pass for date night are the Asparagus with Fresh Dill Vinaigrette and the Garlic Spinach & Tomatoes.

Easily one of my favorite recipes in this whole book, the Mac & Fresh Cheese, made me not miss aged cheeses like Parmesan and sharp cheddar one bit. Even my friends and family can’t tell that this is made completely migraine friendly. When I tested this recipe, I brought all my friends over one night for a cooking class. I knew if they could pull it off, even the newest of cooks could definitely recreate this dish for their families. If you have a little more time in the kitchen or are celebrating a special moment, make it. On another cheesy night, the Boursin Scalloped Potatoes are sure to be a hit too.
