This makes a quick, easy, and comforting breakfast. For kids (of all ages), the process, the shredded wheat, and the mushing up make eating playful.

large shredded wheat biscuits |

tablespoons butter or margarine, divided |

eggs (1 per biscuit) |

salt and freshly ground black pepper, to taste |
Place shredded wheat in a bowl. Bring a pot of water to a boil.
Melt 1 to 2 tablespoons butter in a skillet over medium heat and fry egg to “over easy,” or until white is firm but yolk is runny.
After turning egg, pour boiling water over shredded wheat. Immediately drain water off into sink (use spatula to hold shredded wheat). Place 1 tablespoon butter on each shredded wheat biscuit. Top with fried egg. Season with salt and pepper. Mush egg yolk into shredded wheat and serve.
Makes 1 to 2 servings.
My grandmother used to feed this to my father when he was a boy. He loves it to this day. I remember the first time she cooked it for me. I thought it was odd, but then I tasted it and was sold for good! This is a great alternative to eggs and toast! Even my picky husband and kids love it. Try it—you’ll love it too!
