These are firehouse hot with the recommended 2 tablespoons chipotle chili powder, yet tasters extinguished them in seconds. When buying chicken, note that true chicken tenders can be skimpy. For more substantial pieces, consider getting boneless, skinless breasts and cutting them into strips. You don’t want the chicken pieces to be done before the bacon has cooked.

Preheat oven to 350°F.
Wrap a bacon slice around each chicken tender. Secure top and bottom of bacon with two toothpicks per tender.
In a shallow bowl, mix together brown sugar and chipotle chili powder. Roll bacon-wrapped chicken in mixture, then place on rimmed baking sheet. Bake for 35 minutes, or until chicken is fully cooked and bacon is crisp. (Place under broiler, if bacon is not crispy.) Cool briefly on baking sheet, then roll in drippings and serve.
Makes 8 servings.
This recipe was handed down to me by my sister-in-law. I was skeptical at first, but everyone loves these! I make them all the time for my guests and at family gatherings.
