SOUPS, CHOWDERS, & CHILIS
TESTER’S COMMENTS
I love one-pot soup recipes, and this is a keeper. The vegetable variety adds a lot of color and texture. Smoked paprika is undersung! If you have not tried it, do; it is dramatically different from Hungarian sweet–style. In a slow cooker, this cooked for about 4 hours on high. If you make it on a stovetop, sauté the onions in a bit of olive oil before adding other veggies and water.

I experimented with chili, soup, and stew recipes for a long time, trying to find a combination with a lot of vegetables that my husband (who is not overly fond of vegetables), my son (who doesn’t like spicy food), and I (a vegan with celiac disease) would all enjoy. Ultimately, I found that none were satisfactory, but that if I took a few ingredients from each, I had a combination that we could all enjoy.
