natural muesli
serves 8
200 g (7 oz/2 cups) organic rolled (porridge) oats
35 g (1¼ oz/¼ cup) organic oat bran
90 g (3¼ oz/1 cup) organic wheat germ
30 g (1 oz/¼ cup) organic pepitas (pumpkin seeds)
30 g (1 oz/¼ cup) organic sunflower seeds
30 g (1 oz/¼ cup) organic sultanas (golden raisins)
30 g (1 oz/¼ cup) organic raisins
35 g (1¼ oz/¼ cup) organic dried apricots, finely chopped
2 organic dried figs, finely chopped
15 g (½ oz/¼ cup) organic shredded coconut
Place the oats, oat bran, wheat germ, pepitas, sunflower seeds, sultanas, raisins, dried apricots and figs and coconut into a large bowl and toss well to combine. Add enough water just to cover the dry ingredients. Cover and refrigerate overnight.
Serve the muesli with non-dairy milk, yoghurt and fresh fruit, if desired.
Natural muesli can be stored in an airtight container for up to 2 weeks.
Muesli is one of my favourite breakfast dishes. My father had it every morning of his life. It provides nourishment, energy and fibre — what could be better than that?
