serves 1
250 ml (9 fl oz/1 cup) fresh pineapple juice
250 ml (9 fl oz/1 cup) coconut milk
2 tablespoons coconut oil (see note)
2 tablespoons protein powder (see note)
ΒΌ cup ice cubes
Put all of the ingredients into a blender and blend until the ice is crushed and the mixture is smooth. Serve immediately.
Note: When selecting a protein powder make sure it is either raw or what is called undenatured protein powder, as this type of protein powder supports the immune system. It has the ability to detoxify the cells and support cellular repair and is a very digestible source of protein. Denatured products have been heated and this process means they lose certain immune-enhancing ingredients; many protein powders are also full of sugar. You can purchase good protein powders from most health food stores.
