avocado salsa
makes 2 cups
1 large avocado
2 garlic cloves, crushed
1 small red onion, finely chopped
freshly squeezed juice of ½ lemon
1 teaspoon sea salt
Halve the avocado, remove the stone and then peel. Coarsely mash the flesh in a bowl. Add the garlic, onion, lemon juice and salt and stir well to combine.
Serve the avocado salsa with organic corn chips. The salsa is best eaten on the day it is made.
