green papaya salad
serves 4
1 green papaya, flesh chopped
2 small roma (plum) tomatoes, diced
80 g (2¾ oz/½ cup) macadamia nuts, chopped
¼ teaspoon cayenne pepper
2 tablespoons finely chopped coriander (cilantro) leaves
DRESSING
freshly squeezed juice of ½ lemon
3 garlic cloves, crushed
1 tablespoon shoyu (Japanese soy sauce)
1 tablespoon agave syrup (see note)
To make the dressing, put all of the ingredients into a jar and shake until well combined. Set aside until needed.
Just before you are ready to serve, put all of the salad ingredients into a large serving bowl with the dressing and toss gently to combine. Serve immediately.
