walnut patties

115 g (4 oz/1 cup) ground walnuts
185 g (6½ oz/1 cup) cooked brown rice
40 g (1½ oz/¼ cup) spelt flour
80 g (2¾ oz/1 cup) fresh breadcrumbs
½ teaspoon sea salt
½ teaspoon dried sage
1 garlic clove, crushed
2 teaspoons vegetable stock (bouillon) powder
3 tablespoons almond butter (see note)
2 tablespoons soy sauce
olive oil, for frying
Preheat the oven to 200°C (400°F/Gas 6). Line a baking tray with baking paper.
Put the ground walnuts, cooked rice, flour, breadcrumbs, salt, sage, garlic, stock powder, almond butter and soy sauce into a large bowl and stir well to combine. Set aside for about 15 minutes.
Take one-quarter of a cup of mixture at a time and shape it into patties. Repeat to make 10 patties in total.
Heat a little olive oil in a large frying pan over medium–high heat. Cook the patties, in batches, for 2 minutes on each side, or until golden brown. Transfer to the prepared tray and bake for about 10 minutes, or until heated through.
Serve the walnut patties with your favourite salad and dressing.
Note: Almond butter is made from almonds that are blended to make a paste. It is available from selected supermarkets and health food stores.
